Ingredients 

Main Ingredients

  • 1 tablespoon Olive oil
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 2 tablespoon Fresh ginger, grated
  • 4 cups Vegetable broth
  • 1 cup Carrots, sliced
  • 1 cup Coconut milk
  • to taste Salt and pepper

Instructions 

  1. Heat olive oil in a pot over medium heat.
  2. Add chopped onion and cook until translucent.
  3. Add minced garlic and grated ginger, cook for another 2 minutes.
  4. Pour in vegetable broth and bring to a boil.
  5. Add sliced carrots and simmer until tender, about 10 minutes.
  6. Stir in coconut milk and season with salt and pepper to taste.
  7. Blend the soup until smooth and serve hot.
