Main Ingredients
- 1 tablespoon Olive oil
- 1 medium Onion, chopped
- 2 cloves Garlic, minced
- 2 tablespoon Fresh ginger, grated
- 4 cups Vegetable broth
- 1 cup Carrots, sliced
- 1 cup Coconut milk
- to taste Salt and pepper
Heat olive oil in a pot over medium heat.
Add chopped onion and cook until translucent.
Add minced garlic and grated ginger, cook for another 2 minutes.
Pour in vegetable broth and bring to a boil.
Add sliced carrots and simmer until tender, about 10 minutes.
Stir in coconut milk and season with salt and pepper to taste.
Blend the soup until smooth and serve hot.
