Ingredients 

Main Ingredients

  • 8 oz rice noodles
  • 1 tablespoon ginger, minced
  • 2 cloves garlic, minced
  • 1 bunch kale, chopped
  • 8 oz shiitake mushrooms, sliced
  • 2 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil

Instructions 

  1. 1. Cook the rice noodles according to the package instructions. Drain and set aside.
  2. 2. In a large skillet, heat the olive oil over medium heat. Add the minced ginger and garlic, and sauté for 2-3 minutes until fragrant.
  3. 3. Add the sliced shiitake mushrooms to the skillet and cook for 5-7 minutes until they start to soften.
  4. 4. Add the chopped kale to the skillet and cook for another 3-4 minutes until wilted.
  5. 5. Stir in the cooked rice noodles, soy sauce, and sesame oil. Toss everything together until well combined and heated through.
  6. 6. Serve hot and enjoy!
