- 4 cups Vegetable broth
- 2 tablespoon Miso paste
- 1 tablespoon Grated ginger
- 2 cups Sliced turnips
- 200 grams Soba noodles
- 2 tablespoon Soy sauce
- 1 cup Chopped green onions
1. In a pot, bring the vegetable broth to a simmer.
2. Add the miso paste and grated ginger, stirring until the miso is dissolved.
3. Add the sliced turnips and cook until tender, about 10 minutes.
4. Cook the soba noodles according to package instructions, then drain and add to the soup.
5. Stir in the soy sauce and chopped green onions. Serve hot.
