Ingredients 

Main Ingredients

  • 8 oz soba noodles
  • 1 cup snow peas, trimmed and halved
  • 1 carrot, julienned
  • 2 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon grated ginger
  • 1 lime, juiced
  • 1 tablespoon honey
  • 2 tablespoon sesame seeds
  • 2 scallions, sliced

Instructions 

  1. 1. Cook soba noodles according to package instructions. Drain and rinse under cold water.
  2. 2. Blanch snow peas in boiling water for 1-2 minutes until bright green and crisp-tender. Drain and rinse under cold water.
  3. 3. In a mixing bowl, whisk together soy sauce, rice vinegar, sesame oil, grated ginger, lime juice, and honey.
  4. 4. Add soba noodles, snow peas, carrot, and dressing to the bowl. Toss to combine.
  5. 5. Garnish with sesame seeds and sliced scallions before serving.
