Main Ingredients
- 4 cups carrots, grated
- 2 tablespoons fresh ginger, grated
- 1 tablespoon honey
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 pinch salt
In a large mixing bowl, combine the grated carrots and fresh ginger.
In a small bowl, whisk together the honey, olive oil, lemon juice, and salt.
Pour the dressing over the carrot mixture and toss to coat evenly.
Serve immediately or chill in the refrigerator for 30 minutes before serving.
