  • 2 tablespoon Olive Oil
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Fresh Ginger, grated
  • 2 cups Pumpkin Puree
  • 2 cups Vegetable Broth
  • 1 cup Apple, peeled and chopped
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • ½ teaspoon Ground Cinnamon
  • ¼ teaspoon Ground Nutmeg

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and cook until translucent, about 5 minutes.
  2. Add minced garlic and grated ginger, cook for another 2 minutes.
  3. Stir in pumpkin puree, vegetable broth, chopped apple, salt, black pepper, cinnamon, and nutmeg. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Use a blender to puree the soup until smooth. Return to the pot and heat through before serving.
