- 3 large eggs
- ½ cup all-purpose flour
- ½ cup milk
- ¼ cup granulated sugar
- ½ teaspoon vanilla extract
- ¼ teaspoon salt
- ¼ teaspoon ground cinnamon
- 2 tablespoons unsalted butter
- 1 large apple, peeled, cored, and thinly sliced
- Powdered sugar for dusting (optional)
Preheat oven to 425°F (220°C).
In a bowl, whisk together eggs, flour, milk, sugar, vanilla, salt, and cinnamon until smooth.
In a cast-iron skillet, melt butter over medium heat. Add apple slices and cook until tender, about 5 minutes.
Pour batter over apples and transfer skillet to the oven.
Bake until pancake is puffed and golden, about 15-20 minutes.
Dust with powdered sugar if desired and serve immediately.
