  • 3 large eggs
  • ½ cup all-purpose flour
  • ½ cup milk
  • ¼ cup granulated sugar
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt
  • ¼ teaspoon ground cinnamon
  • 2 tablespoons unsalted butter
  • 1 large apple, peeled, cored, and thinly sliced
  • Powdered sugar for dusting (optional)

Instructions 

  1. Preheat oven to 425°F (220°C).
  2. In a bowl, whisk together eggs, flour, milk, sugar, vanilla, salt, and cinnamon until smooth.
  3. In a cast-iron skillet, melt butter over medium heat. Add apple slices and cook until tender, about 5 minutes.
  4. Pour batter over apples and transfer skillet to the oven.
  5. Bake until pancake is puffed and golden, about 15-20 minutes.
  6. Dust with powdered sugar if desired and serve immediately.
