Ingredients

  • 1 large spaghetti squash
  • 1 lb shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 2 tablespoon olive oil
  • 1 teaspoon red pepper flakes optional
  • 1 tablespoon lemon juice
  • to taste salt and pepper
  • 2 tablespoon fresh parsley, chopped

Instructions 

  1. Preheat your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle with olive oil, season with salt and pepper, and place cut-side down on a baking sheet. Roast for 40-45 minutes, until tender.
  2. While the squash is roasting, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the garlic and red pepper flakes, and cook until fragrant, about 1 minute.
  3. Add the shrimp to the skillet and cook until pink and opaque, about 3-4 minutes per side. Stir in the lemon juice and season with salt and pepper. Remove from heat.
  4. Once the squash is done, use a fork to scrape the flesh into spaghetti-like strands. Add the squash to the skillet with the shrimp and toss to combine.
  5. Garnish with fresh parsley and serve immediately.
