Ingredients

  • 2 cups Broccoli florets
  • 2 cups Carrot slices
  • 1 cup Bell pepper strips
  • 3 cloves Garlic, minced
  • 2 tablespoon Olive oil
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the broccoli, carrots, and bell peppers.
  3. Add the minced garlic, olive oil, dried thyme, dried rosemary, salt, and black pepper. Toss to coat the vegetables evenly.
  4. Spread the vegetables in a single layer on a baking sheet.
  5. Roast in the preheated oven for 20 minutes, or until the vegetables are tender and slightly browned.
  6. Serve warm.
