Ingredients 

Main Ingredients

  • 8 oz Pasta (rotini or fusilli)
  • 1 cup Cherry tomatoes, halved
  • 1 cup Cucumber, diced
  • ½ cup Red bell pepper, diced
  • ¼ cup Red onion, finely chopped
  • ¼ cup Olives, sliced
  • ¼ cup Feta cheese, crumbled

Dressing

  • ¼ cup Olive oil
  • 2 tablespoon Red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove Garlic, minced
  • ½ teaspoon Dried oregano
  • to taste Salt and pepper

Instructions 

  1. Cook pasta according to package instructions. Drain and rinse under cold water.
  2. In a large mixing bowl, combine cooked pasta, cherry tomatoes, cucumber, red bell pepper, red onion, olives, and feta cheese.
  3. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, dried oregano, salt, and pepper.
  4. Pour dressing over the pasta and vegetables. Toss to coat evenly.
  5. Chill in the refrigerator for at least 30 minutes before serving.
