Ingredients

  • 2 eggs
  • 1 mango diced
  • ¼ cup red onion finely chopped
  • 1 jalapeño seeded and minced
  • 2 tablespoon cilantro chopped
  • 1 tablespoon lime juice freshly squeezed
  • 1 tablespoon olive oil

Instructions 

  1. 1. Prepare the mango salsa by combining the diced mango, red onion, jalapeño, cilantro, lime juice, and a pinch of salt in a bowl. Mix well and set aside.
  2. 2. Heat the waffle iron and cook the waffles according to the manufacturer's instructions.
  3. 3. In a frying pan, heat the olive oil over medium heat. Crack the eggs into the pan and cook until the whites are set but the yolks are still runny, about 3-4 minutes.
  4. 4. Place the cooked waffles on plates, top each with a fried egg, and spoon the mango salsa over the top. Season with salt and pepper to taste.
