- 2 eggs
- 1 mango diced
- ¼ cup red onion finely chopped
- 1 jalapeño seeded and minced
- 2 tablespoon cilantro chopped
- 1 tablespoon lime juice freshly squeezed
- 1 tablespoon olive oil

1. Prepare the mango salsa by combining the diced mango, red onion, jalapeño, cilantro, lime juice, and a pinch of salt in a bowl. Mix well and set aside.
2. Heat the waffle iron and cook the waffles according to the manufacturer's instructions.
3. In a frying pan, heat the olive oil over medium heat. Crack the eggs into the pan and cook until the whites are set but the yolks are still runny, about 3-4 minutes.
