Ingredients 

Main Ingredients

  • 1 cup wheat berries uncooked
  • 4 cups arugula washed and dried
  • 8 figs quartered
  • ½ cup feta cheese crumbled
  • ¼ cup walnuts toasted and chopped

Dressing

  • 3 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • to taste salt and pepper

Instructions 

  1. 1. Cook the wheat berries according to package instructions. Drain and let cool.
  2. 2. In a large mixing bowl, combine the arugula, figs, cooled wheat berries, feta cheese, and walnuts.
  3. 3. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper.
  4. 4. Pour the dressing over the salad and toss to combine.
  5. 5. Serve immediately.
