Fig & Arugula Wheat Berry Salad
A refreshing and nutritious salad combining the sweetness of figs with the peppery taste of arugula and the chewiness of wheat berries.

Main Ingredients
- 1 cup wheat berries uncooked
- 4 cups arugula washed and dried
- 8 figs quartered
- ½ cup feta cheese crumbled
- ¼ cup walnuts toasted and chopped
Dressing
- 3 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- to taste salt and pepper
1. Cook the wheat berries according to package instructions. Drain and let cool.
2. In a large mixing bowl, combine the arugula, figs, cooled wheat berries, feta cheese, and walnuts.
3. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper.
4. Pour the dressing over the salad and toss to combine.
5. Serve immediately.
