Ingredients 

Salad Ingredients

  • 2 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ cup red onion, thinly sliced
  • ½ cup crumbled feta cheese
  • ¼ cup chopped fresh mint
  • ¼ cup chopped fresh parsley

Dressing Ingredients

  • 3 tablespoon olive oil
  • 2 tablespoon lemon juice
  • 1 tablespoon harissa paste
  • 1 teaspoon ground sumac
  • to taste salt and pepper

Instructions 

  1. In a large mixing bowl, combine the romaine lettuce, cherry tomatoes, cucumber, red onion, feta cheese, mint, and parsley.
  2. In a small bowl, whisk together the olive oil, lemon juice, harissa paste, ground sumac, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Serve immediately and enjoy!
