Ingredients 

Main Ingredients

  • 1 cup Farro rinsed
  • 2 cups Vegetable Broth
  • 1 cup Cherry Tomatoes halved
  • 1 cup Zucchini diced
  • 1 cup Bell Pepper diced
  • 1 tablespoon Olive Oil
  • 2 cloves Garlic minced
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste

Instructions 

  1. 1. In a large pot, heat the olive oil over medium heat.
  2. 2. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. 3. Add the farro and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. 4. Add the cherry tomatoes, zucchini, and bell pepper. Cook for another 10 minutes, or until the vegetables are tender.
  5. 5. Season with salt and black pepper to taste. Serve warm.
