Ingredients 

Main Ingredients

  • 1 cup Farro rinsed
  • 2 cups Vegetable Broth
  • 1 tablespoon Olive Oil
  • 1 cup Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Spinach fresh, chopped
  • 1 teaspoon Salt or to taste
  • 0.5 teaspoon Black Pepper freshly ground

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. 3. Stir in the minced garlic and cook for another minute.
  4. 4. Add the rinsed farro and vegetable broth. Bring to a boil.
  5. 5. Reduce the heat to low, cover, and simmer for 25-30 minutes, or until the farro is tender.
  6. 6. Stir in the chopped spinach, salt, and black pepper. Cook until the spinach is wilted, about 2-3 minutes.
  7. 7. Serve warm.
