Ingredients 

Main Ingredients

  • 1 cup farro uncooked
  • 2 cups kale chopped
  • ¼ cup olive oil
  • ¼ cup parmesan cheese grated
  • 1 clove garlic minced
  • 1 tablespoon lemon juice freshly squeezed
  • ½ teaspoon salt
  • ¼ teaspoon black pepper freshly ground

Instructions 

  1. 1. Cook the farro according to package instructions. Drain and let cool.
  2. 2. In a blender, combine kale, olive oil, parmesan cheese, garlic, lemon juice, salt, and pepper. Blend until smooth to make the pesto.
  3. 3. In a mixing bowl, combine the cooked farro and kale pesto. Mix well.
  4. 4. Serve the salad at room temperature or chilled.
