Main Ingredients
- 1 cup farro rinsed
- 2 cups water
- 1 cup cherry tomatoes halved
- 1 cup cucumber diced
- ¼ cup red onion finely chopped
- ¼ cup feta cheese crumbled
- 2 tablespoons olive oil
- 1 tablespoon lemon juice freshly squeezed
- 1 teaspoon salt
- ½ teaspoon black pepper freshly ground
1. Cook the farro according to package instructions, then drain and let cool.
2. In a large mixing bowl, combine the cooked farro, cherry tomatoes, cucumber, red onion, and feta cheese.
3. Drizzle with olive oil and lemon juice, then season with salt and black pepper.
4. Toss everything together until well combined. Serve immediately or refrigerate for later.
