Ingredients 

Main Ingredients

  • 1 cup farro uncooked
  • 3 medium beets roasted and diced
  • 1 cup arugula fresh
  • ¼ cup feta cheese crumbled
  • ¼ cup walnuts toasted
  • 2 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper freshly ground

Instructions 

  1. 1. Cook the farro according to package instructions. Drain and let cool.
  2. 2. Preheat the oven to 400°F (200°C). Wrap the beets in foil and roast for 30-40 minutes until tender. Let cool, then peel and dice.
  3. 3. In a large mixing bowl, combine the cooked farro, roasted beets, arugula, feta cheese, and toasted walnuts.
  4. 4. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and black pepper.
  5. 5. Pour the dressing over the salad and toss to combine. Serve immediately.
