Ingredients 

Main Ingredients

  • 1 cup farro uncooked
  • 2 medium beets peeled and diced
  • ¼ cup goat cheese crumbled
  • 2 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • 1 pinch salt to taste
  • 1 pinch black pepper to taste

Instructions 

  1. 1. Cook the farro according to package instructions. Drain and set aside.
  2. 2. Preheat the oven to 400°F (200°C). Place the diced beets on a baking sheet, drizzle with 1 tablespoon of olive oil, and roast for 25-30 minutes, until tender.
  3. 3. In a mixing bowl, combine the cooked farro, roasted beets, and crumbled goat cheese.
  4. 4. In a small bowl, whisk together the remaining olive oil, balsamic vinegar, honey, salt, and black pepper. Pour over the salad and toss to combine.
  5. 5. Serve immediately or chill in the fridge for later.
