Ingredients 

Falafel Mixture

  • 1 can Chickpeas drained and rinsed
  • ½ cup Onion chopped
  • 2 cloves Garlic minced
  • ¼ cup Fresh Parsley chopped
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper
  • ¼ cup Flour
  • 2 tablespoon Olive Oil for frying

Wraps and Toppings

  • 4 Tortillas
  • 1 cup Lettuce shredded
  • 1 Tomato sliced
  • ½ cup Cucumber sliced
  • ¼ cup Tahini Sauce

Instructions 

  1. 1. In a food processor, combine chickpeas, onion, garlic, parsley, cumin, coriander, salt, and pepper. Process until smooth.
  2. 2. Transfer mixture to a bowl and stir in flour. Form into small patties.
  3. 3. Heat olive oil in a frying pan over medium heat. Fry patties until golden brown, about 3-4 minutes per side.
  4. 4. Warm tortillas in a dry pan or microwave. Place falafel patties in the center of each tortilla.
  5. 5. Top with lettuce, tomato, cucumber, and a drizzle of tahini sauce. Roll up and serve.
