Ingredients 

Main Ingredients

  • 4 ears Corn shucked
  • ½ cup Mayonnaise
  • ½ cup Cotija Cheese crumbled
  • 1 teaspoon Chili Powder
  • 1 tablespoon Lime Juice freshly squeezed
  • 8 pieces Taco Shells
  • ¼ cup Cilantro chopped

Instructions 

  1. Preheat the grill to medium-high heat.
  2. Grill the corn for about 10 minutes, turning occasionally, until charred and cooked through.
  3. In a mixing bowl, combine mayonnaise, cotija cheese, chili powder, and lime juice.
  4. Once the corn is done, let it cool slightly, then cut the kernels off the cob.
  5. Mix the corn kernels with the mayonnaise mixture.
  6. Fill the taco shells with the elote mixture and top with chopped cilantro.
