Ingredients

  • 1 large eggplant diced
  • 1 cup walnuts chopped
  • 12 pieces pasta shells cooked
  • 1 cup marinara sauce
  • 1 cup mozzarella cheese shredded
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions 

  1. 1. Preheat oven to 375°F (190°C).
  2. 2. In a saucepan, heat olive oil over medium heat. Add diced eggplant and cook until soft.
  3. 3. In a mixing bowl, combine cooked eggplant, chopped walnuts, salt, and pepper.
  4. 4. Stuff the cooked pasta shells with the eggplant and walnut mixture.
  5. 5. Place stuffed shells in a baking dish. Pour marinara sauce over the shells and top with shredded mozzarella cheese.
  6. 6. Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
  7. 7. Serve hot and enjoy!
