Ingredients

  • 1 large Eggplant diced
  • 1 tablespoon Olive Oil
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 8 small Tortillas
  • 1 cup Shredded Lettuce
  • 1 cup Diced Tomatoes
  • ½ cup Sour Cream
  • ½ cup Shredded Cheese

Instructions 

  1. 1. Heat the olive oil in a skillet over medium heat.
  2. 2. Add the diced eggplant and cook until tender, about 10 minutes.
  3. 3. Stir in the cumin and chili powder, and cook for another 5 minutes.
  4. 4. Warm the tortillas in a separate pan or microwave.
  5. 5. Assemble the tacos by placing the eggplant mixture on the tortillas, then top with lettuce, tomatoes, sour cream, and cheese.
