Ingredients 

Main Ingredients

  • 2 large eggplants sliced lengthwise into ¼ inch thick slices
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 egg beaten
  • 2 cups marinara sauce
  • to taste salt
  • to taste black pepper
  • 1 tablespoon olive oil

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Brush eggplant slices with olive oil and season with salt and pepper. Bake for 15 minutes until tender.
  3. In a mixing bowl, combine ricotta, mozzarella, Parmesan, and beaten egg. Mix well.
  4. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  5. Place a spoonful of cheese mixture on each eggplant slice and roll up. Place seam-side down in the baking dish.
  6. Pour remaining marinara sauce over the rolls and bake for 25 minutes until bubbly.
