Ingredients 

Main Ingredients

  • 1 large eggplant diced
  • 2 tablespoon olive oil
  • 3 cloves garlic minced
  • 1 can diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 400 g pasta any type
  • to taste salt and pepper
  • ¼ cup grated Parmesan cheese optional

Instructions 

  1. 1. Cook the pasta according to the package instructions. Drain and set aside.
  2. 2. In a large frying pan, heat the olive oil over medium heat. Add the diced eggplant and cook until softened, about 10 minutes.
  3. 3. Add the minced garlic to the pan and cook for another 2 minutes.
  4. 4. Stir in the diced tomatoes, dried oregano, and dried basil. Cook for another 10 minutes, stirring occasionally.
  5. 5. Season with salt and pepper to taste.
  6. 6. Toss the cooked pasta with the eggplant mixture. Serve with grated Parmesan cheese if desired.
