Eggplant Parmesan Subs Recipe

- 1 large eggplant sliced into rounds
- 1 cup breadcrumbs
- ½ cup grated Parmesan cheese
- 2 eggs beaten
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 4 sub rolls split
Preheat your oven to 375°F (190°C).
Dip the eggplant slices in beaten eggs, then coat with a mixture of breadcrumbs and Parmesan cheese.
Place the coated eggplant slices on a baking sheet and bake for 20-25 minutes, until golden and crispy.
Warm the marinara sauce in a small saucepan.
Assemble the subs by placing a few eggplant slices on each sub roll, topping with marinara sauce and mozzarella cheese.
Place the assembled subs on the baking sheet and bake for an additional 5-10 minutes, until the cheese is melted and bubbly.
