  • 1 large eggplant sliced into rounds
  • 1 cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • 2 eggs beaten
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 4 sub rolls split

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Dip the eggplant slices in beaten eggs, then coat with a mixture of breadcrumbs and Parmesan cheese.
  3. Place the coated eggplant slices on a baking sheet and bake for 20-25 minutes, until golden and crispy.
  4. Warm the marinara sauce in a small saucepan.
  5. Assemble the subs by placing a few eggplant slices on each sub roll, topping with marinara sauce and mozzarella cheese.
  6. Place the assembled subs on the baking sheet and bake for an additional 5-10 minutes, until the cheese is melted and bubbly.
  7. Serve hot and enjoy!
