Ingredients 

Main Ingredients

  • 2 medium eggplants
  • 1 cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • 2 eggs beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Olive oil spray

Instructions 

  1. Preheat oven to 425°F (220°C).
  2. Cut eggplants into fry-like strips.
  3. Mix breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper in a bowl.
  4. Beat eggs in another bowl.
  5. Dip eggplant strips in eggs, then coat with breadcrumb mixture.
  6. Place on a baking sheet and spray with olive oil.
  7. Bake for 20-25 minutes until golden and crispy.
