Main Ingredients
- 2 medium eggplants
- 1 cup breadcrumbs
- ½ cup grated Parmesan cheese
- 2 eggs beaten
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Olive oil spray
Preheat oven to 425°F (220°C).
Cut eggplants into fry-like strips.
Mix breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper in a bowl.
Beat eggs in another bowl.
Dip eggplant strips in eggs, then coat with breadcrumb mixture.
Place on a baking sheet and spray with olive oil.
Bake for 20-25 minutes until golden and crispy.
