Main Ingredients
- 1 large eggplant sliced thinly
- 2 medium zucchini sliced thinly
- 2 medium yellow squash sliced thinly
- 1 large onion sliced thinly
- 3 cloves garlic minced
- 2 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ cup grated Parmesan cheese
Preheat your oven to 375°F (190°C).
In a baking dish, arrange the sliced eggplant, zucchini, yellow squash, and onion in alternating layers.
Sprinkle the minced garlic over the vegetables.
Drizzle with olive oil and season with salt and black pepper.
Bake in the preheated oven for 35-40 minutes, until the vegetables are tender.
Sprinkle grated Parmesan cheese on top and bake for an additional 5 minutes, until the cheese is melted and golden.
