- 4 large eggs hard-boiled
- ¼ cup mayonnaise
- 1 tablespoon mustard
- ¼ cup celery finely chopped
- ¼ cup green onions finely chopped
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 12 mini bell peppers halved and seeded
1. Peel and chop the hard-boiled eggs.
2. In a mixing bowl, combine chopped eggs, mayonnaise, mustard, celery, green onions, salt, and black pepper. Mix well.
3. Spoon the egg salad mixture into the halved mini bell peppers.
