Egg and Spinach Quesadilla

Ingredients 

Main Ingredients

  • 2 Large eggs
  • 1 cup Fresh spinach chopped
  • 2 Flour tortillas
  • ½ cup Shredded cheese cheddar or your choice
  • 1 tablespoon Butter
  • to taste Salt and pepper

Instructions 

  1. 1. Beat the eggs in a bowl and season with salt and pepper.
  2. 2. Heat a skillet over medium heat and add butter.
  3. 3. Add the eggs to the skillet and scramble until fully cooked. Remove from skillet and set aside.
  4. 4. In the same skillet, add a tortilla and sprinkle half of the cheese on one half of the tortilla.
  5. 5. Add the scrambled eggs and chopped spinach on top of the cheese.
  6. 6. Sprinkle the remaining cheese over the eggs and spinach, then fold the tortilla in half.
  7. 7. Cook until the tortilla is golden brown and the cheese is melted, about 2-3 minutes per side.
  8. 8. Repeat with the second tortilla. Cut into wedges and serve warm.
