Edamame Hummus And Radish Crostini Recipe

Main Ingredients
- 1 cup edamame, shelled and cooked
- ¼ cup tahini
- ¼ cup lemon juice freshly squeezed
- 2 cloves garlic minced
- ¼ cup olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 baguette sliced about ½ inch thick
- 1 bunch radishes thinly sliced
- 2 tablespoon chives chopped
Preheat your oven to 375°F (190°C).
Place the baguette slices on a baking sheet and drizzle with a bit of olive oil. Toast in the oven for about 10 minutes or until golden brown.
In a food processor, combine the edamame, tahini, lemon juice, garlic, olive oil, salt, and pepper. Blend until smooth.
Spread the edamame hummus on the toasted baguette slices.
Top each crostini with a few slices of radish and a sprinkle of chopped chives.
Serve immediately and enjoy!
