Ingredients 

Main Ingredients

  • 1 cup edamame, shelled and cooked
  • ¼ cup tahini
  • ¼ cup lemon juice freshly squeezed
  • 2 cloves garlic minced
  • ¼ cup olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 baguette sliced about ½ inch thick
  • 1 bunch radishes thinly sliced
  • 2 tablespoon chives chopped

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Place the baguette slices on a baking sheet and drizzle with a bit of olive oil. Toast in the oven for about 10 minutes or until golden brown.
  3. In a food processor, combine the edamame, tahini, lemon juice, garlic, olive oil, salt, and pepper. Blend until smooth.
  4. Spread the edamame hummus on the toasted baguette slices.
  5. Top each crostini with a few slices of radish and a sprinkle of chopped chives.
  6. Serve immediately and enjoy!
