Ingredients 

Main Ingredients

  • 1 cup edamame (shelled)
  • 1 large sweet potato (diced)
  • 1 tablespoon olive oil
  • to taste Salt
  • to taste Pepper
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ avocado (sliced)
  • 1 tablespoon sesame seeds
  • 1 tablespoon soy sauce
  • 1 cup cooked quinoa

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Toss diced sweet potato with olive oil, salt, pepper, paprika, and garlic powder.
  3. Spread sweet potato on a baking sheet and roast for 20 minutes or until tender.
  4. Cook edamame according to package instructions.
  5. Assemble the bowl with cooked quinoa, roasted sweet potato, edamame, and avocado slices.
  6. Drizzle with soy sauce and sprinkle with sesame seeds.
