Ingredients 

Main Ingredients

  • 1 cup edamame shelled and cooked
  • 1 cup corn kernels fresh or frozen
  • 1 small red bell pepper diced
  • 1 small red onion diced
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice freshly squeezed
  • to taste salt
  • to taste black pepper

Instructions 

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced red onion and red bell pepper. Sauté until softened, about 5 minutes.
  3. Add minced garlic and cook for another minute.
  4. Stir in edamame and corn. Cook until heated through, about 5 minutes.
  5. Season with salt and black pepper to taste. Add lemon juice and stir well.
  6. Serve warm.
