1. In a large pot, combine vegetable broth, onion, garlic, ginger, star anise, and cinnamon. Bring to a boil, then reduce heat and simmer for 30 minutes.
2. Strain the broth to remove solids. Add soy sauce and keep warm.
3. Cook rice noodles according to package instructions. Drain and set aside.
4. Divide noodles into bowls. Pour hot broth over noodles and top with bean sprouts, lime wedges, fresh herbs, and jalapeno slices.
