  • 6 large potatoes peeled and cubed
  • 4 hard-boiled eggs chopped
  • ½ cup mayonnaise
  • 1 tablespoon yellow mustard
  • 1 teaspoon apple cider vinegar
  • ½ teaspoon paprika
  • to taste salt and pepper

Instructions 

  1. 1. Boil the potatoes in a large pot until tender, about 15 minutes. Drain and let cool.
  2. 2. In a mixing bowl, combine mayonnaise, mustard, apple cider vinegar, paprika, salt, and pepper.
  3. 3. Add the cooled potatoes and chopped eggs to the bowl. Mix until well combined.
  4. 4. Chill in the refrigerator for at least 1 hour before serving.
