  • 2 Delicata squash sliced
  • 1 cup Quinoa cooked
  • 1 cup Kale chopped
  • 1 cup Cherry tomatoes halved
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Slice the delicata squash and place on a baking sheet. Drizzle with olive oil, salt, and pepper.
  3. Roast the squash for 25-30 minutes until tender.
  4. In a mixing bowl, combine cooked quinoa, chopped kale, and cherry tomatoes.
  5. Add the roasted delicata squash to the bowl and toss everything together.
  6. Serve warm and enjoy!
