Instructions
Heat the olive oil in a pot over medium heat.

Add the red lentils, vegetable broth, and diced tomatoes.
Bring to a boil, then reduce heat and simmer for 25-30 minutes, until lentils are tender.
Season with salt and black pepper to taste.
