Ingredients 

Main Ingredients

  • 1 cup red lentils
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 tablespoon olive oil
  • to taste salt
  • to taste black pepper

Instructions 

  1. Heat the olive oil in a pot over medium heat.
  2. Add the chopped onion and cook until translucent.
  3. Add the minced garlic and cook for another minute.
  4. Stir in the curry powder, ground cumin, and ground coriander.
  5. Add the red lentils, vegetable broth, and diced tomatoes.
  6. Bring to a boil, then reduce heat and simmer for 25-30 minutes, until lentils are tender.
  7. Season with salt and black pepper to taste.
