Ingredients

  • 1 cup red lentils
  • 1 large sweet potato peeled and diced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 4 cups vegetable broth
  • 1 can diced tomatoes 14 oz can
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 2 tablespoon olive oil

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. 3. Stir in the minced garlic, curry powder, and ground cumin. Cook for another minute.
  4. 4. Add the diced sweet potato, red lentils, vegetable broth, and diced tomatoes. Bring to a boil.
  5. 5. Reduce heat to a simmer and cook for 20-25 minutes, or until the lentils and sweet potatoes are tender.
  6. 6. Season with salt and pepper to taste. Serve hot.
