Instructions
Rinse the lentils under cold water.
In a pot, combine lentils and water. Bring to a boil, then reduce heat and simmer for 20-25 minutes until tender. Drain and let cool.
In a large bowl, combine cooked lentils, cucumber, tomatoes, red onion, and cilantro.
In a small bowl, whisk together curry powder, olive oil, lemon juice, salt, and pepper.
Pour the dressing over the lentil mixture and toss to combine.
Serve chilled or at room temperature.
