Ingredients 

Main Ingredients

  • 1 cup lentils
  • 2 cups water
  • 0.5 cup diced cucumber
  • 0.5 cup diced tomatoes
  • 0.25 cup chopped red onion
  • 0.25 cup chopped cilantro
  • 1 tablespoon curry powder
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions 

  1. Rinse the lentils under cold water.
  2. In a pot, combine lentils and water. Bring to a boil, then reduce heat and simmer for 20-25 minutes until tender. Drain and let cool.
  3. In a large bowl, combine cooked lentils, cucumber, tomatoes, red onion, and cilantro.
  4. In a small bowl, whisk together curry powder, olive oil, lemon juice, salt, and pepper.
  5. Pour the dressing over the lentil mixture and toss to combine.
  6. Serve chilled or at room temperature.
