Ingredients

  • 1 cup lentils rinsed
  • 2 medium sweet potatoes peeled and diced
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 4 cups vegetable broth
  • 1 can coconut milk
  • to taste salt and pepper

Instructions 

  1. 1. In a large pot, heat a bit of oil over medium heat. Add the chopped onion and cook until softened.
  2. 2. Add the minced garlic, curry powder, and ground cumin. Cook for another minute until fragrant.
  3. 3. Add the diced sweet potatoes, lentils, and vegetable broth. Bring to a boil, then reduce heat and simmer for about 30 minutes, or until the lentils and sweet potatoes are tender.
  4. 4. Stir in the coconut milk and season with salt and pepper to taste. Simmer for another 10 minutes.
  5. 5. Serve hot, garnished with fresh herbs if desired.
