Ingredients 

Main Ingredients

  • 1 head Cauliflower chopped into florets
  • 1 tablespoon Olive oil
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 1 tablespoon Curry powder
  • 4 cups Vegetable broth
  • 1 cup Coconut milk
  • to taste Salt and pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and cook until translucent.
  2. Add minced garlic and curry powder, cook for another minute.
  3. Add cauliflower florets and vegetable broth. Bring to a boil, then reduce heat and simmer until cauliflower is tender, about 20 minutes.
  4. Remove from heat and blend the soup until smooth using a blender or immersion blender.
  5. Return the soup to the pot, stir in coconut milk, and season with salt and pepper to taste. Heat through before serving.
