Curried Cauliflower Chickpeas Recipe

- 1 head Cauliflower cut into florets
- 1 can Chickpeas drained and rinsed
- 1 tablespoon Olive Oil
- 1 medium Onion diced
- 2 cloves Garlic minced
- 1 tablespoon Curry Powder
- 1 teaspoon Ground Cumin
- 1 cup Coconut Milk
- 1 cup Vegetable Broth
- to taste Salt and Pepper
- 1 tablespoon Fresh Cilantro chopped, for garnish
1. Heat olive oil in a large skillet over medium heat.
2. Add diced onion and cook until translucent, about 5 minutes.
3. Stir in minced garlic, curry powder, and ground cumin. Cook for another minute.
4. Add cauliflower florets and cook for 5 minutes, stirring occasionally.
5. Pour in coconut milk and vegetable broth. Bring to a simmer.
6. Add chickpeas, salt, and pepper. Simmer for 15-20 minutes, until cauliflower is tender.
7. Garnish with fresh cilantro before serving.
