Main Ingredients
- 2 cups Cucumber, sliced peeled if desired
- ¼ cup Fresh mint leaves, chopped
- 2 tablespoon Olive oil
- 1 tablespoon Lemon juice freshly squeezed
- ½ teaspoon Salt to taste
- ¼ teaspoon Black pepper freshly ground
1. In a mixing bowl, combine cucumber slices and chopped mint leaves.
2. Drizzle olive oil and lemon juice over the cucumber and mint.
3. Season with salt and black pepper to taste.
4. Toss everything together until well combined.
5. Serve immediately or chill in the refrigerator for 10 minutes before serving.
