  • 200 g rice noodles
  • 1 cucumber sliced
  • 1 mango diced
  • 2 tablespoon miso paste
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 tablespoon sesame seeds for garnish
  • 2 green onions sliced

Instructions 

  1. 1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. 2. In a mixing bowl, combine miso paste, soy sauce, rice vinegar, and sesame oil. Mix well.
  3. 3. Add the cooked noodles, cucumber, and mango to the bowl. Toss to coat with the dressing.
  4. 4. Garnish with sesame seeds and sliced green onions. Serve immediately.
