- 2 medium zucchinis cut into fries
- 1 cup breadcrumbs
- ½ cup grated Parmesan cheese
- 2 large eggs beaten
- 1 teaspoon garlic powder
- 1 teaspoon paprika

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a bowl, mix the breadcrumbs, grated Parmesan cheese, garlic powder, paprika, salt, and pepper.
In another bowl, beat the eggs.
Dip each zucchini fry into the beaten eggs, then coat with the breadcrumb mixture. Place on the prepared baking sheet.
Bake in the preheated oven for 20-25 minutes, or until golden and crispy. Serve immediately.
