Instructions
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
Slice zucchinis into ¼-inch thick rounds.
In a bowl, mix breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
In another bowl, beat the eggs.
Dip zucchini slices in egg, then coat with breadcrumb mixture. Place on baking sheet.
Spray with olive oil.
Bake for 25 minutes or until golden and crispy.
