Ingredients

  • 2 medium zucchinis
  • 1 cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 eggs beaten
  • Olive oil spray

Instructions 

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Slice zucchinis into ¼-inch thick rounds.
  3. In a bowl, mix breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
  4. In another bowl, beat the eggs.
  5. Dip zucchini slices in egg, then coat with breadcrumb mixture. Place on baking sheet.
  6. Spray with olive oil.
  7. Bake for 25 minutes or until golden and crispy.
