- 1 lb baby potatoes
- 2 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 tablespoon fresh parsley, chopped optional
Preheat your oven to 450°F (230°C).
Boil the potatoes in salted water for about 15-20 minutes, or until tender.
Drain the potatoes and let them cool slightly.
Place the potatoes on a baking sheet lined with parchment paper.
Use a potato masher or fork to gently smash each potato.
Drizzle the olive oil over the smashed potatoes.
Sprinkle with salt, pepper, and garlic powder.
Bake for 20-25 minutes, or until golden and crispy.
Garnish with fresh parsley if desired, and serve hot.
