  • 1 lb baby potatoes
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon fresh parsley, chopped optional

Instructions 

  1. Preheat your oven to 450°F (230°C).
  2. Boil the potatoes in salted water for about 15-20 minutes, or until tender.
  3. Drain the potatoes and let them cool slightly.
  4. Place the potatoes on a baking sheet lined with parchment paper.
  5. Use a potato masher or fork to gently smash each potato.
  6. Drizzle the olive oil over the smashed potatoes.
  7. Sprinkle with salt, pepper, and garlic powder.
  8. Bake for 20-25 minutes, or until golden and crispy.
  9. Garnish with fresh parsley if desired, and serve hot.
