Ingredients

  • 4 cups Zucchini, chopped
  • 1 cup Onion, chopped
  • 2 cloves Garlic, minced
  • 2 cups Vegetable broth
  • 1 cup Heavy cream
  • to taste Salt and pepper

Instructions 

  1. 1. In a pot, sauté the onion and garlic until soft.
  2. 2. Add the chopped zucchini and vegetable broth. Bring to a boil, then simmer for 15 minutes.
  3. 3. Blend the mixture until smooth.
  4. 4. Stir in the heavy cream, and season with salt and pepper to taste.
  5. 5. Serve hot.
