Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 2 cans white beans, drained and rinsed (15 oz each)
  • 4 cups vegetable broth
  • 1 teaspoon dried basil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup heavy cream

Instructions 

  1. Heat olive oil in a pot over medium heat. Add chopped onion and cook until translucent, about 5 minutes.
  2. Add minced garlic and cook for another minute.
  3. Add diced tomatoes, white beans, vegetable broth, dried basil, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Use a blender to puree the soup until smooth. Return to the pot and stir in heavy cream. Heat through, but do not boil.
  5. Serve hot and enjoy!
