Ingredients 

Main Ingredients

  • 12 oz Pasta any type
  • 2 tablespoon Olive oil
  • 8 oz Shiitake mushrooms sliced
  • 4 cups Kale chopped
  • 1 cup Cashews soaked
  • 2 cups Vegetable broth
  • 1 tablespoon Nutritional yeast
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper

Instructions 

  1. 1. Cook pasta according to package instructions. Drain and set aside.
  2. 2. In a skillet, heat olive oil over medium heat. Add shiitake mushrooms and cook until tender, about 5 minutes.
  3. 3. Add chopped kale to the skillet and cook until wilted, about 3 minutes. Remove from heat and set aside.
  4. 4. In a blender, combine soaked cashews, vegetable broth, nutritional yeast, garlic powder, salt, and black pepper. Blend until smooth.
  5. 5. Pour the cashew sauce into the skillet with the mushrooms and kale. Stir to combine and heat through.
  6. 6. Add the cooked pasta to the skillet and toss to coat with the sauce. Serve immediately.
